Apparently Gluten-Free People Don’t Know What Gluten Is

The other night Jimmy Kimmel talked about how he had a sneaky suspicion that many people didn’t know what gluten is, even though people claim to be gluten-free.  He sent a correspondent to Runyan Canyon in the Hollywood Hills and found healthy looking joggers and asked them if they were gluten-free.  When many of them said yes, the correspondent asked what gluten is.  These are their responses.

Tip: Gluten is a protein that comes from grains, including wheat.  It’s responsible for the elasticity of dough. Celiac Disease is gluten intolerance where the immune system attacks the small intestine in response to the presence of gluten.  One percent of the population has gluten intolerance, while many more have wheat or specific grain allergies.  Gluten-free diets avoid breads and other foods from grains.
