Healthy Recipe: Peanut Butter Bites

photoAnyone who knows me, knows I love me some nut butter.  Almonds, peanuts, cashews… yum!  Well, check out this awesome recipe I found from @Talinegabriel!!

Peanut Butter Bites

Ingredients

Base:
– 1 cup walnuts
– 1 cup coconut
– 1/4 cup cacao
– pinch salt
– 8 dates
– 1/4 cup rice syrup

Filling:
– 4 ripe bananas
– 2 cups natural peanut butter (+4ish tbsp extra for final layer)
– 1 tsp vanilla
– 3 tbsp coconut oil

Directions
Blend together base ingredients until broken down and mixture sticks together.  Press into base of mini, round molds.  Refrigerate.  Blend filling ingredients until smooth.  Pour over base.  Freeze until set.  Top with layer of peanut butter to achieve a 2 tone effect.  Store in refrigerator or freezer.
